Tropical Twist on the Chocolate Chip Cookie
If you read my blog, then you know that I am a big fan of coconut. I've always loved it. When I was a kid, one of my favorite candy bars was the Mounds bar. Dark Chocolate and coconut go very well together in my book. So today I am showing you a chocolate chip cookie which features this yummy combination.
Several years ago, I came across the recipe for a cookie described as a chewy, moist coconut cookie with dark chocolate chips. I was reading The Baking Sheet, a King Arthur Flour newsletter published several times per year, when I turned the page to see Susan Reid's recipe for coconut chocolate chunk cookies. I had most of the ingredients in my pantry. I needed the unsweetened coconut flakes, coconut milk powder and coconut flavoring , all of which were available from KAF's online store. I immediately placed an order and waited impatiently for the box to arrive. Since discovering this recipe, I always keep these tropic ingredients stocked. I still buy the coconut milk powder from KAF but I buy the coconut flakes from Nuts.com. Prices are great at Nuts.com but what really sets them apart is the speed with which items are shipped. Here's the dough for coconut chocolate chunk cookies. Check out the big flakes of coconut. And the chips! Look at all those chips! Scoop the dough by tablespoonfuls, plop them on a parchment lined cookie sheet and bake them at 325 degrees for 9 to 11 minutes.
Ding! There's the timer! And here's the cookies. Don't they look great? Be honest ... you want one of these cookies, don't you?
